Our Typical Lunch at Home

Well to be honest our typical lunch isn't much... But it is pretty standard I believe.





There it is a typical lunch at the Schmidt house. A Sandwich on Whole Wheat Bread, Milk and some Fruit or Veggie. The sandwich shown is PB&J though it frequently is Ham and Cheese.

Camping and Road Trip = Carbs and Badness


Now doesn't that look tasty! Oh, and it was! Breakfast yesterday consisted of some of the most delicious, cinnamon french toast, eggs with sausage gravy and bacon. Oh ya some good eating.

Thick sliced french bread
Eggs
Cinnamon

Beat eggs and add cinnamon (it's your food how much cinnamon do you want?)
Dip bread slices in egg mixture and fry on buttered skillet.
Serve with spreadable real butter and sugar free syrup.

Fresh Tomato Soup

We got a whole lot of tomatoes from Ryan at the yard sale on saturday, So I made Tomato soup for lunch today.

FRESH TOMATO SOUP

6 ripe tomatoes, chopped
2 tbsp. butter
3 c. chicken stock
1 c. milk or cream
Salt & pepper to taste
Butter

Saute tomatoes in butter until tender. Mix tomatoes with stock, simmer 20 minutes. Cool 5 minutes; run mixture through blender. Pour back into saucepan; add milk, salt and pepper to taste and a pat of butter. Heat and serve. Serves 4 to 6.

Thursday, Going into a Busy Weekend

Sent Ken off with a full order of hot wings left over from last night and a small salad. He snacked on blueberries going out the door.

Kids had cheerios for breakfast, string cheese later for a snack.

Lunch is comming up, The kids have told me they want grilled cheese again! I guess that is their new favorite meal. I think I'll have a bowl of salad.

Dinner time will be busy, I think I'll make Steamed Chicken Breasts and Salad.

I need to go and buy some bread for tomorrow when Kenny's Mom will be here to watch all the kids.

Wednesday Wing Night!

Started off like anyother day, cheerios for breakfast. Sent Kenny to work with a salad and hamburger patties topped with a slice of cheese and ham.

Nic and Ainsley had PB&J sandwiches, Max, Chloe and I had ham and cheese sandwiches, all on whole wheat bread.

For dinner the kids had grilled cheese on whole wheat and Ken and I went to Jack sons sports bar for wing night...

All you can eat wings mmm my favorite extracuricular activity. Kenny stuck with Garlic Hot Wings all night and I went with a basket of sweet and tangy, thai peanut and golden garlic. Beverage of the night was Diet Coke.

Duplicate of Yesterday!

There isn't much left in the refrigerator/pantry guess I'll have to find time to go shopping today. We do have enough food for a duplicate of yesterday. Cheerios for breakfast, grilled cheese for lunch.

Kenny took a small salad and half a chicken breast for lunch. I saw him munch on some string cheese and pepperoni slices before we left the house today.

I don't exactly know what I'm making for dinner yet... I'll have to give that some more thought.

8/14/2006

The kids and I had a bowl of cheerios, w/whole milk for breakfast

Lunch was Grilled Cheese Sandwiches (cheddar cheese/whole wheat bread) with Blueberries and Raspberies

Monday is Kenny's Mongolian day, with mongolian without noodles.

I have 3 chicken breasts and a green salad in the refrigerator for dinner

Lazy Lime Chicken
3 tablespoons olive oil
3 or 4 boneless, skinless chicken breasts
salt and pepper to taste
1/2 lime, juiced
1/4 cup butter
1/4 teaspoon dried dill weed

Heat oil on medium high heat. Put salt and pepper on chicken (to taste). brown chicken, a few minutes on each side. Cover pan, simmer. Cook the chicken untill done and juices run clear, about 10 minutes. Put chicken on a plate and keep warm. Drain excess oil from pan. Add lime juice, cook on low until it begins to boil. Add butter 1 tablespoon at a time. Cook until butter becomes opaque, and sauce thickens. Remove from heat, and stir in dill weed. Spoon sauce over chicken, and serve.

Garlic Fried Pork Steaks

Feeling sleepy tonight, going to pan fry some pork steaks
3 medium size pork steaks
2 T butter
1 clove garlic pressed
pepper to taste
onion (slices of rings)
worchestershire sauce just a tiny bit (this is sugary)

sautee garlic in butter, pan fry pork untill done like 8 minutes or so, add some pepper to pork. Remove from pan, brown onions, cook untill soft and yummy, add some worschestershire sauce to sauteeing onions.

The best way to have this is with applesauce, but being on Atkins we don't have any in the house. So tonight we'll have it with the last bit of the Dill Coleslaw from yesterday and some green salads.

8/13/2006 Breakfast/Lunch

Kenny had another Grapefruit for Breakfast.

The kids and I had 1 cup cheerios with 1/2 whole milk
For lunch the kids will have PB&J sandwiches and berries.

Kenny and I will have some of the left over birthday salad with some canned chicken pieces sprinkled on it.

My Mom's Birthday

Birthday's are always hard.

Started off the morning with two sick kids, so breakfast/lunch consisted of whole wheat toast with butter. I had the same, later in the day we had toast again with peanut butter on it.

Kenny had a Large Grapefruit for breakfast and tuna salad for lunch.

We had my family come over for an early dinner.
Hamburgers and Hotdogs, Kenny "hamburgers sans buns"
A very large veggie filled salad
Romain and Red Leaf Letuce
Onions
Tomatoes
Broccoli
Red and Green Bell Pepper

and a sugar free coleslaw on the side
Bag of ColeSlaw Mix, pre shreaded cabbage
1/2 cup Mayonaise
1/4 cup Apple Cider Vinegar
1/2 teaspoon celery salt
1/2 teaspoon dill
1/2 teaspoon ground black pepper
1/2 teaspoon salt
Whisk together and mix into the shreaded cabage. We added 1 Tablespoon splenda because it was quite sharp with the vinegar.

We made homemade Sugar Free Vanilla Ice Cream
3 eggs
2 cups of heavy cream
1/2 cup of water
5 Tablespoons of Splenda
1 Teaspoon of Vanilla Flavoring
Blend eggs in blender till light and fluffy, blend in Splenda one Tablespoon at a time. Add remaing ingredients and blend well. Pour into Ice Cream maker and follow manufacturers instructions.

We had the ice cream with regular sugary/carbolisious chocolate cake with white icing. Kenny opted out on the cake along with my sister-in-law. They had Raspberries and Blueberries instead.

We went out and Mom, Melody and I consumed large glasses of honey brewed beer, Ken and Jared stuck with water I think Ken may have had some Beer at the beginning of the night. We did have Nacho's and Hot wings to snack on. It was a party, we had to live a little bit.

8/ 11/2006

Sent DH to work today with about 2 cups of salad and a small container of taco meat for left over taco salad, a string cheese for a snack and some flavored water.

The kids and I will each have 1 cup cheerios in 1/2 cup whole milk for breakfast, water for drinking

PB&J sandwiches on whole wheat bread and some,canned in water, peaches for lunch, 1/2 cup whole milk.

Taco Salad

Dinner 08/10/2006

Make Taco Meat:

Brown 1 1/2 lbs lean ground beef
ADD
2 T Dry Onion Flakes
1 T Chili Powder
1/2 T Cumin
1/2 T Italian Seasoning
1/2 T Garlic Powder
Salt and Pepper to taste

Taste mixture and adjust for your tastes

Prepare Salad Fixins':

Make a bowl of salad greens, Romain and Red Leaf or other Dark Green Leafy Vegetables
Dice Onions, Tomatoes
Open Can of Sliced Olives
Shread some Cheddar Cheese

Serve All the Ingredients with Salsa and Real Sour Cream
